Tuna on Cucumber Slices

- 120g canned tuna (brined)
- ½ teaspoon black pepper
- ½ red onion (chopped)
- 60g reduced fat mayonnaise
- ½ cucumber
- 1 teaspoon chives (for garnish)
Open the tuna, drain and add it to a bowl. Add the black pepper, chopped red onion and mayonnaise. Mix all the ingredients together and set aside.
Slice the cucumber into thick slices. Add a teaspoon of the tuna to each slice and sprinkle on the chives.
