- 1 large rack of ribs (600g - 700g)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 teaspoon onion granules
- 1 teaspoon garlic granules
- 2 teaspoon paprika
- ½ teaspoon cayenne pepper
- 1 teaspoon oregano dried or fresh
- 150ml barbeque sauce use good quality bbq sauce
- 40g pure clear honey
- 25ml extra virgin olive oil
- 1 teaspoon minced garlic
Preheat the oven to gas mark 5/375oF/190oC/170oC fan. Clean and prepare your ribs then remove the membrane underneath the ribs. To a small bowl add and combine the salt, black pepper, onion granules, garlic granules, paprika, cayenne pepper and oregano then set aside.
Place a piece of foil onto a baking tray and ensure its large enough to fully cover the ribs. Place the ribs onto the tray then pour on the seasonings you mixed earlier. Smooth the seasoning all over the ribs ensuring the rack is evenly covered. Cover the ribs with the foil and seal it like a parcel. Cook in the oven for 2 hours. While the ribs are in the oven, combine the barbecue sauce, honey, olive oil and minced garlic then set aside.
Remove the tray from the oven and drain off any juices that the meat produces from cooking. Brush the sauce onto the ribs ensuring you coat the whole rack. Once the whole rack is covered, pour the remainder of the sauce onto the ribs so all the sauce is used up. Place the ribs uncovered back into the top area of the oven and cook for 25 minutes. Allow to cool for 10 minutes before serving.
