Smoked Salmon Avocado on Cucumber Slices
These smoked salmon and avocado on cucumber slices are delicious and filling and perfect if you are following a low carb diet and need a quick snack.

- 1 medium avocado
- 1 pinch salt
- 1 pinch black pepper
- 1 tablespoon lime or lemon juice
- 140g smoked salmon
- 1 cucumber
- 1 - 2 teaspoon chives (fresh or dried) (for garnish)
Cut, remove skin and mash the avocado with a fork. Add the salt, black pepper and lime juice then mix them into the avocado. Set aside while you cut the smoke salmon into pieces.
Slice the cucumber and top each slice with 1 teaspoon of mashed avocado then place the smoked salmon on top. Sprinkle on the chives and serve.
