Smoked Salmon Avocado on Cucumber Slices

These smoked salmon and avocado on cucumber slices are delicious and filling and perfect if you are following a low carb diet and need a quick snack.

Ingredients

  • 1 medium avocado
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tablespoon lime or lemon juice
  • 140g smoked salmon
  • 1 cucumber
  • 1 - 2 teaspoon chives (fresh or dried) (for garnish)

Instructions

  • Cut, remove skin and mash the avocado with a fork. Add the salt, black pepper and lime juice then mix them into the avocado. Set aside while you cut the smoke salmon into pieces.
  • Slice the cucumber and top each slice with 1 teaspoon of mashed avocado then place the smoked salmon on top. Sprinkle on the chives and serve.
