Simple Tomato and Cucumber Salad

This recipe makes a tomato and cucumber salad that is perfect as a side salad and uses simple ingredients.

Ingredients

  • 4 large fresh tomatoes
  • ½ large cucumber
  • ½ large red onion
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 tablespoon parsley chopped

Instructions

  • Rinse and dry the tomatoes and cucumber then use a sharp knife and cut them into small cubes. Place them on a plate lined with kitchen towel then cut the red onion into small cubes and also add them to the plate. Add the chopped tomatoes, cucumbers, and red onions to a salad bowl and toss the salad together.
  • In a small bowl, add and combine the olive oil, lemon juice, salt, black pepper and garlic powder to make the dressing. Pour the dressing onto the salad and toss a few times then garnish with parsley. Serve immediately or refrigerate until needed.
