Simple Tomato and Cucumber Salad
This recipe makes a tomato and cucumber salad that is perfect as a side salad and uses simple ingredients.

- 4 large fresh tomatoes
- ½ large cucumber
- ½ large red onion
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- 1 tablespoon parsley chopped
Rinse and dry the tomatoes and cucumber then use a sharp knife and cut them into small cubes. Place them on a plate lined with kitchen towel then cut the red onion into small cubes and also add them to the plate. Add the chopped tomatoes, cucumbers, and red onions to a salad bowl and toss the salad together.
In a small bowl, add and combine the olive oil, lemon juice, salt, black pepper and garlic powder to make the dressing. Pour the dressing onto the salad and toss a few times then garnish with parsley. Serve immediately or refrigerate until needed.
