Simple French Toast
This recipe makes a simple classic French toast that is made with cream which gives this French toast a lovely flavour.

- 1 tablespoon butter for cooking
- 1 tablespoon sunflower oil for cooking
- 1 large egg
- 30ml whole milk
- 30ml double cream or heavy cream
- 1 teaspoon vanilla extract
- ¼ teaspoon ground cinnamon
- 1 teaspoon caster sugar
- 4 slices brioche bread
Add the butter to a microwaveable bowl and melt in the microwave for 25 seconds or until it fully melts. Pour the oil into the bowl with the butter and mix. Set the bowl aside as this mixture will be used for cooking.
To a shallow bowl, add and whisk the egg, milk, double cream, vanilla extract , cinnamon and caster sugar. Ensure the bowl is wide enough for the bread to lay flat.
Place a frying pan on a medium heat and add some of the butter-oil mixture. While it heats up, take a slice of the bread and lay it flat in the mixture but don’t allow the bread to become completely soaked through. Flip the bread and coat the other side in the mixture then place the bread in the pan. If your pan is large, you can cook 2 slices at once.
Cook the French toast for 3 minutes then flip with a spatula and cook for another 3 minutes or until both sides are golden brown. Use the spatula to remove the French toast from the pan and repeat the process with the other 2 slices of bread. Serve with your favourite topping.
