Sautéed Spinach with Tomatoes

This recipe is for sautéed spinach with tomatoes. The recipe is delicious, quick and can be prepared in under 10 minutes so it’s a perfect contribution towards a quick mid-week meal.

Ingredients

  • 1 tablespoon olive oil
  • 75g cherry tomatoes halved
  • 1 small onion chopped
  • 2 cloves garlic chopped
  • 250g - 300g raw young spinach
  • ¼ teaspoon salt to taste
  • ¼ teaspoon black pepper to taste
  • ¼ teaspoon garlic granules optional

Instructions

  • Add the cooking oil to a large frying pan on a medium to high heat. Add the onions, garlic and cherry tomatoes then cook for 4 minutes or until the tomatoes are soft.
  • Gradually add the spinach and cook until wilted. Season with the salt, black pepper and garlic granules, stir then serve.
