Pink Lady Apple Crumble Bars

If you love apple crumble then you will love this recipe for apple crumble bars. They are crumbly, flavoursome and they go perfectly with custard, ice-cream or whipped cream.

Ingredients

For the Filling

  • 4 medium pink lady apples (peeled and chopped)
  • 40g granulated sugar
  • 1 tablespoon cornflour (cornstarch)
  • 1 tablespoon lemon juice
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

For the Crumble

  • 165g plain flour
  • 150g rolled oats
  • 75g granulated sugar
  • 75g soft brown sugar
  • ½ teaspoon salt
  • 180g unsalted butter

Instructions

  • Preheat the oven to gas mark 5/375oF/190oC/170oC fan and line a 8 x 8 inch (20cm) baking tin with baking paper. Make the filling by adding the chopped apple, granulated sugar, cornflour, lemon juice, cinnamon, nutmeg and vanilla extract to a medium bowl then combine. Set aside.
  • To a stand mixer bowl, add and combine the plain flour, oats, granulated sugar, brown sugar and salt. Add the butter to a microwavable bowl and melt it in the microwave using 30 second increments. Pour the melted butter into the bowl with the dry ingredients and use the paddle attachment to combine the butter with the dry ingredients. You can also use a hand mixer to complete this step.
  • Pour just over half of the crumble mixture into the baking tin then evenly spread and press the mixture into the bottom of the baking tin. Ensure it is tight and compact. Spread the apple filling evenly on top of the pressed down crumble. Now take the rest of the crumble, sprinkle it on top of the apples and slightly press down. Optionally, you can sprinkle 1 teaspoon of granulated sugar on top. Bake for 50 minutes or until golden brown. Allow to cool before cutting into 16 bars.
