Left Over Roast Chicken Tacos

These chicken tacos are honestly so good and this is the perfect recipe to use leftover roast chicken. The recipe is quick and easy with hardly any work involved.

Ingredients

  • 2 mini tortilla wraps
  • 80g mozzarella (grated)
  • 100g cooked roast chicken (chopped)
  • 2 teaspoon hot sauce
  • 2 teaspoon lime juice (squeezed from a fresh lime)
  • ½ small red onion (chopped)
  • 2 teaspoon coriander/cilantro (chopped)

Instructions

  • Place a non frying pan on a low to medium heat and lightly grease. Place a tortilla in the pan then sprinkle some of the mozzarella onto the tortilla to cover the whole surface. As the cheese begins melt, sprinkle on the chopped chicken and allow to heat with the cheese. Ensure the heat is not too high or the tortilla will burn.
  • Pour a teaspoon of the hot sauce onto the chicken, then 1 teaspoon of the lime juice. Sprinkle on some chopped red onion and sprinkle on some coriander then use a spatula to fold the tortilla. Remove the tortilla with the spatula then repeat the process to make the second taco. Serve with your favourite dip.
