Grilled Lemon and Herb Chicken
This recipe makes a lemon and herb chicken that is cooked in a delicious marinade and can be served as a main with your favourite side dish.

- 2 medium chicken breast fillets
- ½ teaspoon salt (optional)
- ½ teaspoon black pepper
- ¾ teaspoon onion granules
- 30ml extra virgin olive oil
- 1 lemon (juiced)
- 2 teaspoon minced garlic
- 1 teaspoon fresh oregano (chopped)
- 2 teaspoon fresh rosemary (chopped)
- 1 teaspoon fresh thyme (chopped)
- 2 teaspoon fresh sage (chopped)
- 1 teaspoon fresh parsley (chopped)
Add the chicken to a bowl, and season with the salt, black pepper and onion granules then set aside. In a bowl add and mix together the olive oil, lemon juice, minced garlic, chopped oregano, rosemary, thyme, fresh sage and parsley.
Add the chicken to the marinade and mix to ensure the marinade coats the chicken. Cover the bowl with clingfilm and place the chicken in the fridge for at least 1 hour. The longer the better.
Preheat the grill to a medium to high heat. Place the chicken on the grill then brush the chicken with the marinade. Grill the chicken breasts for 18 - 20 minutes turning halfway through. If your chicken breasts are large then they may need longer. Once cooked through, remove from the grill and allow to sit at room temperature for 10 minutes before slicing. Time to enjoy.
