Buttery Prawns in Honey Garlic Sauce

- 200g raw king prawns
- ¼ teaspoon salt optional
- ½ teaspoon black pepper
- ¾ teaspoon paprika
- 2 tablespoon honey
- 2 tablespoon soy sauce reduced salt
- 1 tablespoon lemon juice
- 1 teaspoon butter
- 3 cloves garlic chopped or grated
- 1 inch piece root ginger chopped or grated
- parsley to garnish
Devein the prawns and rinse. Pat the prawns dry with kitchen paper towels and sprinkle on the salt, black pepper and paprika then set aside. In a small bowl mix together the honey, soy sauce and lemon juice and set aside.
Place a frying pan on a high heat and add the butter. Once the butter has melted and slightly browned, add the prawns in a single layer. Cook for 1 - 2 minutes then turn them and cook for 1 -2 minutes. The cooking time will be dependent on the size of your prawns. Remove them from the pan and set aside. It doesn’t matter if the prawns don’t fully cook as they will continue to cook when they are added back to the pan later.
To the pan you removed the prawns from, add the chopped garlic and ginger and cook on a medium heat for 3 - 4 minutes. Pour the sauce into the pan and heat for 2 - 3 minutes or until the sauce slightly thickens. Add the prawns back into the pan and mix into the sauce. Allow to simmer for 1 - 2 minutes then remove from the heat, garnish with parsley and serve.
