Beef Broccoli Stir Fry

Ingredients

  • 100g tenderstem broccoli washed
  • 100g egg noodles (dry weight) or 250g cooked noodles
  • 1 medium orange juice squeezed
  • ¾ tablespoon soy sauce reduced salt
  • ¾ tablespoon sesame oil
  • 1 large sirloin steak around 225g
  • ¼ teaspoon salt optional
  • ¼ teaspoon black pepper.
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 tablespoon sunflower oil
  • ½ medium red bell pepper sliced
  • 25g root ginger peeled and finely chopped
  • 1 clove garlic finely chopped
  • 1 small brown onion chopped

Instructions

  • Place a pot of water on a high heat and bring to a boil. Once the water is boiling, add in the broccoli and allow to boil for 2 minutes. Strain the tenderstem and set aside.
  • If using dried noodles, place a pot of boiling water on a high heat and bring to a boil. Cook or soak for the time on the packaging, usually around 4 minutes. Strain, rinse with cold water and set aside. This is so they don't continue to cook and become mushy. Skip step 2 if using fresh noodle.
  • To a small bowl, add and combine the orange juice, soy sauce and sesame oil then set aside.
  • Season the sliced beef with salt, black pepper, onion powder and garlic powder then place a frying pan on a medium to high heat. Add the oil to the pan and allow to heat. Once the oil is sizzling, add the beef and stir fry for 3 - 4 minutes or until cooking through. Use a slotted spoon to remove the beef and set it aside on a plate.
  • If necessary add more oil then add in the red bell peppers and stir fry for 1 minute. Add in the ginger, garlic and onions and continue to stir fry for 2 minutes. Add in the tenderstem, beef and noodles and stir fry for 30 seconds then add and mix in the sauce. Remove from the heat and serve immediately.
