Baked Chicken Wrapped in Pancetta
This recipe makes baked chicken breasts that are seasoned then wrapped in pancetta slices. The chicken and pancetta go well together and will go with almost any side dish you serve it with.

- 4 medium chicken breasts
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 2 teaspoon garlic granules
- 2 teaspoon onion granules
- 1 teaspoon dried thyme
- 12 slices pancetta
- 15ml extra virgin olive oil
Preheat the oven to gas mark 6/400oF/200oC/180oC fan. Season all the breasts with the salt, black pepper, paprika, garlic granules, onion granules and thyme.
Wrap each chicken breast with 3 slices of pancetta then place each breast in a baking dish. Lightly brush each chicken breast with the olive oil then bake for 25 – 30 minutes. Allow to stand for 10 minutes before serving.
