These smoked salmon on cucumber slices are super quick to prepare and a great snack to keep your sugar levels low. You can prepare them and take it out with you when on the go and you can have them whipped up in less than 5 minutes. Though they are the perfect snack, they can also be served as an appetiser.
Ingredients for Smoked Salmon Avocado on Cucumber Slices

- Avocado - use any ripened avocado.
- Seasonings - use salt and black pepper to flavour.
- Lime juice - squeezed from a fresh lime.
- Smoked salmon - to top the slices.
- Cucumber - I use a English cucumber but you can use any cucumber.
- Chives - use fresh or dried for garnish.
How to Make Smoked Salmon Avocado on Cucumber Slices
1. Cut, remove skin and mash the avocado with a fork. Add the salt, black pepper and lime juice then mix them into the avocado. Set aside while you cut the smoke salmon into pieces.
2. Slice the cucumber and top each slice with 1 teaspoon of mashed avocado then place the smoked salmon on top. Sprinkle on the chives and serve.

Storage

Ingredients

- 1 pinch black pepper
- 1 tablespoon lime or lemon juice
- 140g smoked salmon
- 1 cucumber
- 1 - 2 teaspoon chives (fresh or dried) (for garnish)
