This recipe makes a small batch of oven baked crispy spicy chicken bites that are perfect for lunch or dinner or to serve as a sharing dish with your favourite sauce.
These oven baked chicken bites are so delicious and another thing I love about them is that they are baked instead of fried. They are easy to make and you can easily double the recipe to make a larger batch. Firstly, the chicken is cut into chunks and seasoned then coated in breadcrumbs. It dipped in a spicy sweet sauce and baked until crisp.
These crispy chicken bites are sweet and spicy but not over the top spicy so they are great for those who like just a little spice. You can serve these chicken bites with any side you want but they go great with rice or as a sharing food to share with family or friends.
Ingredients for Baked Spicy Chicken Bites

- Chicken – I use chicken breast fillets.
- Seasoning for chicken – salt, black pepper, paprika, garlic powder, ground ginger and cayenne pepper.
- Flour – use plain flour or all-purpose flour.
- Egg – the recipe only requires 1 medium egg.
- Breadcrumbs – I use panko breadcrumbs.
- Sriracha – or any red-hot sauce.
- Honey – I use clear honey.
- Oil – use any neutral flavoured vegetable oil.
How to Make Baked Spicy Chicken Bites
1. Preheat the oven to gas mark 7/425oF/220oC/200oC fan then line a tray with parchment paper and set aside. Use some kitchen towels to pat the chicken breasts until dry then cut them into chunks and add them to a bowl. Sprinkle on the salt, black pepper, paprika, garlic powder, ground ginger and cayenne pepper. Mix the seasonings into the chicken then set aside.
2. Gather together 4 bowls. To one add the plain flour, to another add and whisk the egg. To another, add the panko breadcrumbs and to the last one, add and combine the sriracha, honey and vegetable oil.
3. Take a piece of chicken, dip it into the flour and fully coat. Dust off any excess and dip into the egg. Drain off any excess egg and dip into the breadcrumbs ensuring the chicken is fully coated then lightly dip the chicken into the sauce. When dipping into the sauce, don’t fully submerge the chicken pieces just lightly dip turn and lightly dip on the other side. Place the chicken on the baking tray lined with parchment paper then repeat the process with the rest of the chicken pieces. Ensure you leave some space between the chicken pieces.
4. Once all the chicken pieces are coated, bake in the oven for 20 - 25 minutes. Remove from the oven and allow to stand for 5 minutes before serving.
