This recipe makes peanut butter banana and chocolate chip blondies. They include smooth peanut butter, mashed bananas and milk chocolate chips which together create the most amazing flavour.
If you have a leftover banana that is overripe then you can make these peanut butter banana chocolate chip blondies. These blondies are chewy, rich and fudgy with a yummy flavour so they're perfect to enjoy in the afternoon with a cup of tea or as an after-dinner treat.
They are very easy to prepare and the recipe is very adaptable so you can use milk, dark or white chocolate chips. You can also add ingredients such as chopped pecans or walnuts.

- Flour - I use plain flour for this recipe.
- Salt - I use sea salt but any salt will do.
- Cornflour - use to give the blondies a chewy texture. Also known as cornstarch.
- Bicarbonate soda - also known as baking soda.
- Butter - use unsalted butter.
- Sugar - I use a combination of light brown sugar and granulated sugar.
- Vanilla - use vanilla extract or vanilla bean paste.
- Eggs - room temperature eggs.
- Banana - use a medium overripe banana.
- Peanut butter - I use smooth peanut butter.
- Chocolate - use dark or milk chocolate chips.
How to Make Peanut Butter Banana and Chocolate Blondie Bars
1. Preheat the oven to gas mark 4/350oF/180oC/160oC and line a rectangle baking tin which measures approximately 13 x 9 inches. In a bowl, combine all the dry ingredients (plain flour, salt, cornflour and bicarbonate soda) then set aside.
2. In a microwavable bowl, add the butter and microwave in 40 second increments until fully melted. Remove and set aside to cool.
3. To the butter, add the brown sugar and granulated sugar then mix until smooth. Mix in the vanilla extract then the eggs and continue to mix. Add and mix in the mashed banana and peanut butter then fold in the dry ingredients and combine well. Lastly, add and mix in the chocolate chips.
4. Pour the batter into the prepared baking tin and bake for 35 - 40 minutes. Once baked, allow to cool completely before cutting.
